Australia’s iconic all-day dining restaurant bills, known worldwide as the home of “the world’s best breakfast,” has officially launched its SPRING/SUMMER 2025 MENU across all eight of its Japan locations starting Tuesday, April 22nd.

This season, bills invites diners to savor the essence of “Mediterranean Comfort Food”, a theme inspired by the laid-back coastal lifestyle of the Mediterranean region—where meals are meant to be shared with family and friends over sunshine, sea breezes, and a glass of wine.

Crafted with fresh vegetables, superfoods, and vibrant herbs, the new lineup emphasizes health-conscious, flavor-forward dishes that bring out the best of seasonal ingredients.

Spring/Summer Highlights: From Morning to Night

While bills is beloved for its breakfast and brunch offerings, this new seasonal menu spans every part of the day—right through to dinner.

Start your day with the Buckwheat & Spring Onion Pancake (¥2,000), topped with smoked salmon and a refreshing lemon butter sauce that balances bright citrus, herbs, and the earthy aroma of buckwheat. It’s light, nourishing, and satisfying.

Also on the breakfast rotation is the Pandan Leaf & Rice Berry Porridge (¥1,500)—bills’ take on a beloved Asian rice pudding, and a comforting option perfect for warmer mornings.

For lunch or a nutritious brunch, the Cha Soba & Sesame Avocado Salad Bowl (¥2,000) is a standout. Featuring cha soba, avocado, soft-boiled egg, and pickled root vegetables, it’s finished with a house-made broth of kombu, shiitake, and white miso—an East-meets-West creation full of umami depth.

Dinner Delights

Often thought of as a breakfast destination, bills actually serves dinner until 10 PM, with exclusive evening menu items worth exploring.

The Roast Pork & Watermelon Salad (¥1,650), paired with coriander, fresh ginger, and chili, surprises and delights with its unique blend of bold and refreshing flavors. The sweet, spicy, and savory layers harmonize beautifully—don’t miss the perfect bite of pork, watermelon, and coriander together.

Seasonal Drinks to Match

The new menu also features a curated selection of spring and summer drinks. For non-alcoholic options, try the zesty Pineapple Shrub (¥900), a fermented drink with a sharp citrus punch, or the Mandarin Highball (¥1,200), made with Japan’s first non-alcoholic gin, NEMA 0%.

For those looking to sip on something stronger, the Sakerossini (¥1,400)—a blend of premium sake from Yamaguchi’s Sumikawa Brewery and fresh fruit—is a highlight. Or try the Limoncello Spritz (¥1,500), featuring bills’ house-made limoncello, for a breezy Italian-style aperitif.
