On August 8, 2024, Kei Collection Paris, the acclaimed French-Japanese grill gastronomy restaurant led by Michelin three-star chef Kei Kobayashi, hosted an exclusive daytime tasting event at Toranomon Hills Station Tower in Tokyo. Select media and culinary professionals were invited to preview a curated seasonal menu, reflecting the restaurant’s innovative blend of French techniques and Japanese sensibilities.

The tasting featured standout dishes highlighting Chef Kobayashi’s dedication to precision and creativity. The centerpiece was the Wagyu Hayashi Rice (¥3,500), inspired by the classic omelette-style Hayashi rice. Tender cubes of Wagyu filet were simmered in a rich demi-glace, served over buttery pilaf, and topped with fluffy scrambled eggs, exemplifying elevated comfort cuisine.

Guests also experienced the Octopus Puttanesca Pizza (¥2,800), featuring octopus marinated in white wine and paprika, simmered for tenderness, and baked with fresh tomatoes, capers, and olives. Each pizza was individually crafted, showcasing meticulous attention to flavor and presentation.

To complement the dishes, a selection of summer alcoholic beverages was offered, providing refreshing pairings ideal for a daytime event.

The menu also highlighted a variety of desserts, emphasizing seasonal flavors and refined presentation. Offerings included the Miyazaki Mango Shaved Ice (¥3,200), bursting with ripe mango and accented by passion fruit and coconut; Black Sesame Shaved Ice (¥1,800), combining white miso and bamboo charcoal espuma with rich black sesame syrup; and Monaka Ice Creams (¥1,200 each) in Uji Matcha with caramelized walnuts or Praline Chocolate with ganache, crafted to order for optimal texture and flavor.

Perched on the 49th floor, the restaurant provided panoramic views of Tokyo, enhancing the sensory impact of the tasting. This event underscored Kei Collection Paris’s commitment to innovative French-Japanese cuisine, merging seasonal ingredients, playful creativity, and precision technique.
